Ms. Vinitha Ang is trained in nutrition & psychology with a master degree in heath care management. A vegetarian herself, she formerly owned NutriHub – the Organic Fusion Café and founded Nutrihub Culinary Art in June 2012. Since then, Ms. Vinitha Ang has conducted various classes such as vegan baking, vegan Thai, Vegan Japanese and vegan Asian cuisines.

Takeaway from NutriHub Nutri™ Vegan Thai Cuisine Class

A group of 7 of us attended Teacher Vinitha’s Nutri™ Vegan Thai Cuisine Class on Sat 24 Nov 2012. We were introduced a total of 4 dishes – Vegetarian Curry, Vegan Pad Thai, Tofu Green Curry and Basil Olive Brown Rice.

 

I have had the chance to taste NutriHub’s vegetarian curry once before at their previous cafe at Chinatown and was so satiated by it that I wrote a post on it.

This time round, Vinitha used cashew nut milk instead of soy milk to make the curry. Traditionally coconut milk is used to make curries, but coconut milk has high saturated fat content, so soy milk and nut milk are much healthier alternatives.

The vegetarian curry turns out as good as the last time I tasted it. Home-made goodness!

 

Our next dish is vegan Pad Thai using organic rice noodles. Look how beautiful the noodles turned out to be! The taste and smell of lemon grass and kaffir lime leaves are sublime.

Some sprouted beans are served on top as garnish. These beans were sprouted by Vinitha and they tasted really crunchy! Vinitha said we should cut and eat the sprouts while they are young and not wait till the leaves appear. I have mentioned briefly in my previous blog on why sprouting nuts and seeds and even grains is good for us. I will explore in another blog in more detail about sprouting.

 

 

 

Next, we learn to make Tofu Green Curry and Basil Olive Brown Rice.

 

 

Vinitha likes to use organic sunflower oil and organic grape seed oil in her cooking as these oils are lighter. I also learned that it is best to soak rice ( be it brown rice or conventional rice) before we  cook them, to remove the acids and possible arsenic elements. Also, to make our rice even mroe delicious, we can put some rock salt or sea salt, as well as some oil into our rice before we cook them.

Lastly, all of us get to pack some of the yummy food back to enjoy with our families.

 

I will be back for the next couple of lessons (8th & 15th Dec), which are on vegan baking. The day I received Nature’s Superfoods’ raw organic cacao nibs, I added a tablespoonful to my salad.

Vegetarian & Organic – Bi Bim Bap & Salty Biscuits with Hibiscus Tea

I had the chance to drop by local vegetarian haven Fortune Centre recently and remembered to try the Vegetarian Bi Bim Bap at New Green Pasture Cafe I had mentioned in my previous bog post Tasty & Healthy Organic Vegetarian Food in Singapore.

Brown rice was used and it came piping hot in a clay pot. I was nicely surprised to see so many ingredients that went into my Bi Bim Bap. There were mushrooms, vegetarian eggs, fish pieces, seaweeds, sprouts, sliced radish … and I seemed to taste ground peanuts as well in the rice.

It was well-cooked, tasty and the portion was definitely filling. The serving was quite big so I decided to forgo ordering dessert.

Before I went into New Green Pasture Cafe however, I spotted a signage that pointed to Tian Yuan Healthy Vegetarian Food Paradise (田园健康素食品). The shop is not visible from the escalator, so thank goodness for the sign.  It seems the shop also serves food, but I think they really does retail as they stock all sorts of vegetarian items.

I bought a box of Wholemeal Salty Peacake (全麦豆沙饼)at less than $5.00 for ten pieces. They were really yummy! Not too sweet nor salty. According to the box, all the ingredients used are organic, which includes wholemeal flour, mung bean, sunflower oil, cane sugar, sesame and French seasalt. Filter water is used instead of normal unfiltered water.

I took my peacakes with Organic Hibiscus Flowers Tea which I had bought from Yes Natural.

Hibiscus flowers contain high Vitamin C and helps to relieve cold and dissolves phlegm. It is also good for the heart and blood circulation, lowers blood pressure as well as cholesterol level.

The tea turns bright red once hot water is poured onto the tea leaves and it has a slight sourish refreshing taste, which goes well with the salty peacakes!

The Veg School

Kee Yew, the organiser for Organic Living Meetup in Singapore, has started The Veg School (TVS) with a group of enthusiasts keen on a vegetarian lifestyle.

I recently had a healthy and filling lunch at NutriHub at their new place (which coincidentally is near to BGO’s eco stockist CHOOSE eco store).

I ordered a brown rice set and was too hungry then to take a picture of it for this blog post. Anyway, it was yummy and I overheard a customer commenting on a marvelicious avocado milk drink which she had had. Of course, I had to order that (apparently it was not on the menu that day).

It was avocado-y creamy which I like (soy milk was used instead of dairy milk) and they added organic chia seeds into the drink. Chia belongs to the mint family and its seeds are rich in omega-3 fatty acids (so you see, fish oils aren’t the only source of omega-3!). Of one of the health benefits of omega-3, evidently omega-3 fatty acids reduce the risk of secondary and primary heart attack. So I also bought a packet of chia seeds home to stir into cereals and milo drinks.
