Superfoods: Organic Quinoa

Quinoa (pronounced ‘Keen-Wah, commonly called 小小米 xiǎo xiǎo mǐ), is a healthy whole grain that is naturally free of trans fat, cholesterol and gluten. The ancient super grain quinoa is packed with protein (about 9 grams per cup), fiber (5 grams per cup), potassium, manganese, magnesium, and iron. With its whole grain goodness, quinoa can reduce your risk of heart disease and diabetes and even help you maintain a healthy weight or lose weight.

Quinoa has a mild flavour and crisp texture that makes it extremely versatile with or in any dish. How to cook Quinoa
Cooking quinoa is as easy as cooking rice, couscous or millet.

Rinse quinoa well before cooking. Place water and Quinoa (1 part Quinoa to 2 parts water) in a saucepan, bring to a boil. Reduce to a simmer, cook for 10-15 minutes until the Quinoa is translucent, plump and the external germ (“spiral tail”) is visible. Drain remaining water and serve with any dishes. Quinoa can be eaten plain, like rice.

Note: Cooked Quinoa expands the same way as rice – abut 2-3 times the original uncooked amount.

Leftover cooked Quinoa may be kept 3-4 days in the refrigerator. To make Quinoa flour, which may be used in baking or as a healthy thickener in sauces, soups and gravies, grind Nature’s Superfoods Quinoa in a blender for a few minutes.

World Vegetarian Day – Vegetarian Marathon 2011

 

Couldn’t make it in time to blog about this inaugural Vegetarian Marathon organized by Pranic Healing Singapore, in celebration of World Vegetarian Day on 1 October. Seems like it is like Amazing Race-kind-of event whereby a vegetarian contestant pairs up with a non-vegetarian friend and visit about 15 vegetarian eateries in town.

Well, as vegetarians ourselves, we’ll make sure we blog about such events in time next time when we come across them!

As an October baby (today happens to be my birthday!) and a vegetarian as well, it is exciting for me to know that World Vegetarian Day on October 1 initiates the month of October as Vegetarian Awareness Month, and ends with November 1 with World Vegan Day.

October 2 is also  World Farm Animals Day (WFAD) or World Day for Farm(ed) Animals and October 16 is United Nations World Food Day (often a time of global reckoning with issues of human food security).

Let’s celebrate and remember the reverence for life of all beings.

‘Happy Feet’ Walk cum Carnival 2011 @ Fort Canning

In conjunction with the Parks Festival, Veggie Thursday is organising the ‘Happy Feet’ Walk cum Festival on 
Sun, 25 Sep, 8am – 1pm at Fort Canning
. Entry is free. Below are the details from the organizer:

Expect a fun-filled morning of games, feet pampering activities (such as foot reflexology) and of course, delicious vegetarian food. To cut down on waste, we urge participants to bring their own reusable plates, bowls and utensils. There will also be frisbees for sale available for those who want to try using these also as plates! Two fun things in one, eating and playing –banana leaf included ;)

All participants are encouraged to either go barefoot or wear slippers!
